I have an addiction for quality kitchen knives. So I was very pleased to have the opportunity to review a 7″ Santoku from the Ergo Chef Pro-series. I have been using the knife for about a month now.
While traditional traditional western chef’s knives use a rocking slice motion Santoku knives are designed to be used with a chopping motion. It took me a little while to become accustomed to using this style of knife. The adjustment period was due to the knife being a Santoku style, not the ergonomic handle. I actually liked the feel of the handle right from the start.
I’ve found myself reaching for this Ergo Chef knife, over my German blades for vegetable prep the majority of the time, since it arrived. The blade has held up well so far, as well as my premium German blades. The handle construction is top notch, as well. As far is the ergonomic advantage of this knife over others, I have found it to be a bit easier on the hand. I am sure it would make even more of a difference when selecting a traditional Western chef knife, which are known to put more stress on the wrist.
